Every summer the rose fields around Kannauj are picked at dawn for attar. We take the petals the distillers leave behind, dry them in the shade, and fold them into the best leaf we can buy. That's the whole recipe.

05 · The ritual
Four minutes.No shortcuts.
Swirl hot water round the pot first. Cold china steals the heat.
A heaped teaspoon. Petals are light, so heap it.
Let the kettle rest a minute. Greens want three.
Nothing left sitting on the leaf. Steep again for a softer cup.

Two cities,one cup.
Kannauj has distilled rose into attar for centuries. Kolkata has sold India's tea to the world for almost as long. We sit between the two.
