02 · The idea

Every summer the rose fields around Kannauj are picked at dawn for attar. We take the petals the distillers leave behind, dry them in the shade, and fold them into the best leaf we can buy. That's the whole recipe.

03 · The collection

Five teas, one garden.

04 · What's in the caddy

Only whatyou can see.

Damask rose

Petals from the Kannauj distilling fields, shade-dried the week they're picked.

First-flush leaf

Whole leaf from gardens we can name, tasted before we buy a single lot.

Whole spice

Cardamom, cinnamon and saffron threads, crushed the week we pack.

Nothing else

No flavouring oil, no colour, no dust, no refined sugar. Tip a caddy out and check.

05 · The ritual

Four minutes.No shortcuts.

WarmThe pot

Swirl hot water round the pot first. Cold china steals the heat.

2.5 gPer cup

A heaped teaspoon. Petals are light, so heap it.

90°COff the boil

Let the kettle rest a minute. Greens want three.

3 minThen pour it all

Nothing left sitting on the leaf. Steep again for a softer cup.

06 · Where it comes from

Two cities,one cup.

Kannauj has distilled rose into attar for centuries. Kolkata has sold India's tea to the world for almost as long. We sit between the two.
